How do you add subcatagories? There is no direct help article here and there should be as Surnames are placed in subcatories -- or is this newbie just missing something?

"Subcategory" is the term for any category in relation to its parent category or categories. So you may want to look at Help:Category (which is the target of a "redirect" page that I have just created at Help:Subcategory). Pages about individuals are put into categories, mostly using the preformatted lines in the standard pages that you can create from input boxes. Each surname category is a subcategory of Category:Surnames, but that's almost fully automatic too. — Robin Patterson (Talk) 23:30, 28 February 2009 (UTC)
